Our cooking is traditional Tuscan, and we pay a lot of attention to the origine place and the quality of food products.
We prefer local raw materials as: farro, mushrooms, meats, trouts and flours like “formenton 8 file” or chestnut flour, potatoes, wallnuts, cheeses and old cuts, Garfagnana is so rich of these products, and you will find all the special tastes of this land in our corse, that are prepared in the traditional way and following the philosophy of the “home-made”.
